A new food hall and brewery is coming to Pasco County this summer

It will have six food vendors and craft beer and cocktails.

This summer, a new food hall is opening in Trinity, the small city that’s at the intersection of Pasco, Pinellas and Hillsborough counties.

The Collective at Escape is from John McGregor and Matt Thompson, the owners of Trinity-based Escape Brewing Company. It will also be the new location of the brewery, which is celebrating its 10th anniversary in September.

McGregor said they’re hoping The Collective at Escape will open in August. He said the idea for a food hall with chef-driven food vendors and craft beer and cocktails was actually born 4 ½ years ago, but the pandemic delayed their plans.

It will be the first food hall in Trinity. McGregor said he and Thompson wanted to create a place where local folks can eat and drink without having to drive too far.

Six food vendors will occupy the 18,000-square-foot interior space. They will be announced over the next few weeks on both Escape Brewing’s and The Collective’s social media accounts.

But McGregor did let us know what kind of food to expect: pizza, sushi, coffee and doughnuts, smash burgers, fried chicken sandwiches, Asian fusion and street tacos.

Escape Brewing Company’s beers like IPAs, fruited sours and lagers will be served, and the hall will have a craft cocktail bar.

Entertainment like live music and games including bocce ball and cornhole will happen in the 4,000-square-foot outdoor beer garden.
